Let's say I book LUX-LHR-JFK-SFO for Summer 2021. LUX-LHR-JFK on BA, JFK-SFO on AA. I'm going to assume there will be some form of schedule change on at least one of those flights over the next ~9 months. Assuming this is true - would BA (or AA) allow me to change dates of the JFK-SFO (or SFO-JFK) segments so that they become stopovers rather than connections (e.g. I book LUX-LHR-JFK-SFO for June 1st and returning June 30th but then there's a change JFK-SFO, would I be allowed to keep LUX-LHR-JFK on June 1st but move SFO-JFK to e.g. June 20th)?

Generally you have to stay within the fare rules. As these fare don't allow stopover it will be hard for you to get them to move just one part of the flight. They will either offer to move the whole thing or put you on the next flight or just rebook you on the direct flight. Of course you can get lucky and an agents somehow adds a stopover.

Does anyone know when this fare will be valid until? I could not find the ending date for this sale in the rules.. the reason I am asking is because BA's schedule goes slightly further out compared to AA and because of this I am not able to book some extra sectors in there due to AA not having the schedule yet and it'll take it another couple of weeks before the AA schedule is filed (same as how far google flights can go).

The fare basis is INN0T0S4 and I cannot see any ticketing conditions in the fare rules. No blackout dates, minimum stay or advance purchase requirements either.
However these flash fares often don't hang around so don't dither. And remember, with BA.com you've got 24hours cooling off. Book now think later

LUX-LHR-JFK-LAX-ANC
It gives you 3 long sections and one short. 140*3+40*1=460 each way. So 920 TP round trip.
The last section LAX-ANC looks like needs to be on AS. So it can be problematic till AS joins OW.

BA sells AS metal as their own code to destinations where AA doesnt serve

Unlike some other fares this one is straight forward.
Using advanced routing just specify those exact connection points.
R/T Lux-ANC under advanced controlled just plug in LHR JFK LAX. It usually doesn't like 3 connection points but with this fare it isn't a problem as you can't get it in less then 2 connections.
